Ambrosia Eggnog Candy

Ingredients

  • 2 cups sugar
  • 1 tbs light corn syrup
  • 1 tsp vanilla
  • 1 cup flaked coconut
  • 1 cup canned or dairy eggnog
  • 2 tbs butter or margarine
  • 1/2 cup chopped candies cherries

Preparation

Step 1

Batter sides of heavy 3 quart saucepan. In prepared pan combine sugar, eggnog and corn syrup. Cook over medium heat, stirring constantly till the mixture comes to a boil. Cook to soft boil stage without stirring. Immediately remove from heat, cool to lukewarm without stirring. Add butter and vanilla then beat vigorously till very thick and candy just starts to loose its gloss. {about 8 minutes} Quickly stir in cherries and coconut, pour into buttered 8x8x2 inch loaf pan.
