Ingredients
- 2 2 2 Tbsp. unsalted butter
- 1 1/2 1 1/2 1/2 C. long-grain white rice
- 1/2 1/2 1/2 yellow onion, diced
- 1/2 1/2 1/2 tsp. kosher salt
- 3 3 3 garlic cloves, minced
- 2 1/2 2 1/2 1/2 C. low-sodium chicken stock
- 1/2 1/2 1/2 C. tomato sauce
- 1 1 1 roma tomato, diced
- 1/4 1/4 1/4 tsp. cumin
Preparation
Step 1
In a large saucepan over medium-high heat, add butter. Once butter is melted, add rice, onion and salt and saute until rice is lightly browned, about 5 minutes. Add garlic and saute for one additional minute. Turn heat to high and add chicken stock, tomtato sauce, diced tomatoes and cumin. BRing to a boil. Cover and reduce heat to low.Simmer for 15 minutes. Uncover and stir. cover and cook for 10 more minutes. Fluff rice with a fork and transfer to a serving bowl.
