Spinach and Blue Cheese Pasta Sauce

Ingredients

  • 1 lb. spinach
  • Scant 2 c. milk
  • 1 medium onion
  • 1/4 lb. blue cheese
  • 1 garlic clove
  • Salt and pepper
  • 2 tbsp flour

Preparation

Step 1

Chop the spinach and steam for 5-10 minutes until tender. Chop the onion and saute in hot oil with the crushed garlic for 5 minutes. Add the flour and cook for 1 minute. Gradually add the milk and stir until thickened. Simmer gently for 3 minutes. Crumble the cheese and add to the sauce. Stir in the spinach and season with salt and pepper. Cook, stirring until the cheese has melted. Serve with freshly cooked fettucine, or pasta of your choice.
