Maple Cider Vinegrette & Spinach Apple Salad

Ingredients

  • 1/3 cup Cider vinegar
  • 2 Tbsp. Pure Maple Syrup
  • 1 Tbsp. Dijon mustard
  • 1/4 tsp. Kosher salt
  • 1/4 tsp. Pepper
  • 2/3 cup Olive Oil

Preparation

Step 1

Whisk together cider vinegar and everything except oil. Gradually whisk in oil until well blended. (Make up to 3 days ahead)

Serve with Spinach Apple salad

1 10 oz pkg of baby spinach, thoroughly washed.

1 Gala apple - thinly sliced
1 small red onion, thinly sliced
1 4-oz pkg crumbled goat cheese
6 oz of pecan halves
