Beef Taco Bake

Ingredients

  • 1 pound lean ground beef or turkey
  • 1 can tomato soup
  • 1 cup salsa (I used Pace Chunky Salsa, Medium)
  • One -half cup milk
  • 6 flour tortillas (8") cut into 1" pieces
  • 1 cup shredded cheddar cheese
  • 1 cup shredded taco blend cheese (or just use more cheddar)

In skillet over medium heat, cook beef until browned, stirring to separate the meat. Drain any extra fat. Add soup, salsa, milk, tortilla pieces and half the cheese. Spoon into a shallow 2 quart baking dish and cover. Bake at 400 degrees for 30 minutes or until hot throughout. Sprinkle with remaining cheese as soon as you remove it from the oven.

Serve with chopped green onions, chopped lettuce, sour cream, and chunks of tomatoes and a side of tortilla chips.
