Ingredients

  • 5 cups milk warmed
  • 1/2 pound bacon
  • 10 tbsp butter
  • 1 cup chopped celery
  • 2 red onions - finely chopped
  • 1/1 /2 cups flour
  • 1 qt chicken stock
  • 1 lb cheddar cheese shredded
  • kosher salt
  • fresh ground pepper
  • 1 1/2 tsp Tabasco sauce
  • 3 tsp Worceshire sauce
  • 12 ounces warm ale

Preparation

Step 1

Warm milk slowly

brown the bacon and chop
add butter and milk
add celery and onion and cook
add flour and mix
add chicken stock
add warm milk
thicken
reduce heat to low
season with kocher salt pepper, tabasco and worstershire
just prior to sesrving add the warm ale
garnish with bacon and fresh chives
