2013: Mexican Cornbread

Ingredients

  • 1 cup cornmeal
  • 2 eggs
  • 1 tablespoon bacon grease
  • 1 teaspoon salt
  • 3/4 cup buttermilk
  • 1/2 teaspoon baking soda
  • 1 cup cream style corn
  • 1 small can green chilies, chopped or whole
  • Grated American or cheddar cheese

Preparation

Step 1

Mix all ingredients except the chilies and cheese.

Pour half of the batter in greased pan. If whole chilies are used, remove the seeds. Place on layer of batter. Place a layer of cheese on top of chilies.

Pour remaining batter over the cheese and bake in 400 degreeoven for 30 to 40 minutes
