Tortellini with mushroom, tomatoe and spinach

Ingredients
- Cheese Tortillini
- 1 package mushrooms sliced
- 1 package spinach rinsed
- 2 t. olive oil
- 2 t. garlic
- 3/4 t. cayenne pepper
- 1 carton cherry tomatoes halved
- 1/2 C chicken broth
- 2 T. basil, fresh and chopped
- salt to taste

Step 1
Cook Tortellini and drain
Heat oil in pan.
Add Garlic and Cayenne Pepper.
Add Tomatoes and Mushrooms.
Add Spinach and cover for several minutes to begin and wilt the spinach, do not wilt all the way.
Add broth, basil, salt to taste.
Cook 2 minutes.
Add pasta and reheat through about 1 min.
I love to brown some pine nuts for the top as well as add some parmesan cheese.
