Orzo Salad -2

Ingredients

  • 1 lb. orzo
  • 1 pint grape tomatoes, chopped
  • 1 bell pepper, chopped
  • 1.2 cup sliced black olives
  • 2 Tbps. fresh basil, chopped
  • 2 Tbsp. frsh parsley, chopped
  • 1/2 cup lemon juice
  • salt and pepper, to taste
  • 1 1/2 tea. dried oregano
  • 1/4 - 1/3 cup olive oil
  • 4 - 8 oz. fetta cheese (depending on preference)

Preparation

Step 1

Cook orzo according to package directions. Drain and mix with chopped veggies and fresh herbs.

Whisk together lemon juice, salt and pepper, oregano, and olive oil to create dressing.

Drizzle it over pasta and veggies, and gently mix.

Add feta and lightly mix.
