Ingredients
- Ingredients:
- Chicken Medallions -(can be lightly floured)
- Bacon
- Mushrooms
- Roma Tomatoes
- Angel Hair Pasta
- Lemon Butter Sauce:
- 2 cups chicken broth
- 2 TBSP cornstarch mixed with 2 TBSP cold water
- 1/4 cup butter
- 1 egg yolk lightly beaten with 1 TBSP cold water
- 3 TBSP lemon juice
- salt and white pepper

Step 1
Directions:
Brown boneless, skinless chicken medallions in butter. Brown cut up bacon and cut up mushrooms and finely diced Roma tomatoes together. Make lemon butter sauce.
Heat chicken stock and mix in cornstarch mixture and cook stirring constantly until thickened. Add butter and beat to blend. Reduce heat, cover, and simmer 2 to 3 minutes. Do NOT boil. Take off heat and mix with remaining ingredients (egg yolk, water, and lemon juice). Season with salt and pepper.
Serve chicken pieces with bacon and tomato and mushroom mixture over angel hair pasta mixed with Lemon Butter sauce. Pour extra sauce on top.
