PICO DE GALLO SALAD

Ingredients

  • 10 med. tomatoes, quartered (bigger than cherry but smaller than romas - the ones on the vine)
  • Red onion, thinly sliced (to taste)
  • Garlic - 1-2 cloves chopped
  • Fresh cilantro, to taste (about handful before chopping)
  • Juice from 2 limes
  • Salt
  • Avocado

Preparation

Step 1

Place all ingredients - except avocado - into a ziplock and mix up. Place in refrigerator til ready to use. When ready to use, can add avocado to the bag and swish in the juice. Pour over lettuce.
