Hummus

This Middle Eastern spread, when not used to fill a sandwich, is usually spread on a small plate, drizzled with olive oil, and garnished with olives, pepperoncini (small pickled Italian peppers), and a splash of hot sauce in the center, then scooped up with fresh pita bread. Yum!

Ingredients
- 1 1/2 cups cooked chickpeas (cooked from dry; or canned, drained)
- 3 Tbs. tahini (sesame paste)
- 3 Tbs. fresh lemon juice
- 2 Tbs. vegetable oil
- 1 Tbs. olive oil
- 2 cloves garlic, minced
- 1/4 tsp. ground cumin
- 1/8 tsp. salt, or to taste
Preparation
Step 1
Place all the ingredients in a food processor container fitted with a steel blade. Cover and process blend until pureed.
VARIATION:
Add 1/4 cup chopped scallions (green parts only) and Tabasco hot sauce to taste
