Sweet Potatoes - Grilled Cajun Sweet Potatoes

  • 4 medium sweet potatoes
  • 1 tea. salt
  • 1 tea. whilte pepper
  • 1 tea. gorund cumin
  • 1 tea. paprika
  • 2 tea. fresh thyme, minced
  • 1 1/2 tea. brown sugar
  • 1 tea. garlic powder
  • 1 tea. cayenne pepper, or more to taste
  • 4 Tbsp. olive oil

Preparation

Step 1

Blanch potatoes in salted, boiling water until you are just able to pierce them with a knife, about 8 minutes. Cool, peel and then slice potatoes (about 1/4" thick).

Mix together spices and olive oil in a medium bowl. Brush potatoes well on all sides with oil mixture and then grill on a lightly oiled rack over medium-high heat. Grill potatoes on each side until they develop nice grill marks, about 3 minutes per side.

Sprinkle with a little salt just before serving.
