Crunchy Baked Sole

Ingredients

  • 4 fresh sole fillets (about 4 oz each), rinsed and patted dry
  • 2 tbs lime juice
  • 1/2 cup flour
  • 1 egg
  • 1 cup panko or plain dry bread crumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp pepper

Preparation

Step 1

Put the fish in a shallow casserole dish. Pour the lime juice over the fish. Turn to coat. Cover with plastic wrap and refrigerate for 15 minutes, turning once.

Meanwhile, preheat the oven to 400 degrees. Lightly spray a baking sheet with cooking spray.

Put the flour on a plate and pour the egg into a shallow bowl. On a separate plate, stir together the remaining ingredients. Set in a row with the baking sheet. Remove a fillet from the lime juice and dip in the flour, turning to coat and gently shaking off the excess. Dip in the egg, turning to coat and letting any excess drip off. Dip in the panko/bread crumb mixture, turning to coat and gently shaking off any excess. Place on the baking sheet. Repeat with the remaining fillets.

Bake for 15 minutes, or until the fish flakes easily when tested with a fork.
