Ingredients
- 30 oz. frozen chopped spinach
- 2 Tbsp. butter
- 2 Tbsp. flour
- 2-2/3 cups milk
- 1-1/3 lb cheddar cheese, shredded
- 1/2 cup melted butter (1/2 for topping)
- 5 eggs, beaten
- 1 tsp. white pepper
- 1 tsp. nutmeg
- Bread crumbs

Step 1
1. Preheat oven to 375 degrees F.
2. Thoaw spinach and squeeze to remove all liquid. Set spinach aside in a 3 qt. shallow baking dish. Melt 2 Tbsp. butter in a 3 qt saucepan. Add the flour and whisk until blended. Cook this roux for several minutes to a golden brown.
3. Pour sauce over spinach, tossing until well coated. Toss the bread crumbs with remianing 1/4 cup melted butter. Sprinkle the casserole with bread crumbs in mixture and bake for 30 minutes.
Casserole may be prepared (up to, but not including the bread crumbs) and stored in the refrigerator for one day. When cooking the casserole right from the refrigerator, add an additional 15 minuts baking time.
