Ingredients
- 4 1/4 C flour
- 2 pkg active dry yeast
- 1 1/2 C warm water
- 3 T sugar
- 1 T salt
- 1 T sugar
Preparation
Step 1
1. Combine 1 1/2 C flour and yeast. combine warm water, sugar, and salt. Pour water mixture over flour mixture. Beat for 30 sec. on low speed, then 3 minutes at high speed. Stir in as much of remaining flour as possible with a wooden spoon.
2. Knead dough on a floured surface until smooth and elastic. Cover and let rest 10-15 minutes. Cut into 12 portions, make into rings. Place rings on a greased baking sheet. Cover and let rise additional 20 minutes. Meanwhile, bring 1 gallon water+ 1 T sugar to a boil.
3. Broil for 1 1/2 - 2 minutes on each side. Tops should not brown. Reduce heat on boiling water and cook bagels in water for 7 minutes. Boil 4 at a time, turn once during boil. Drain well.
4. Bake bagels on greased sheet at 375 deg. 25-30 minutes.
