Ingredients
- 1 can tomato paste (6 ounce)
- 3 tablespoons chipotle chile canned in adobo, chopped
- 1 tablespoon molasses
- 12 thick slices sourdough bread
- 18 ounces sharp cheddar cheese, thinly sliced
- 4 plum tomatoes, cut into 1/4-inch-thick slices
- 1 small red onion, thinly sliced
- 1 cup fresh cilantro leaves
- 6 tablespoons butter, room temperature
Preparation
Step 1
1. Puree tomato paste-molasses until smooth. Spread 1 tb over 1 side of each bread slice.
2. Arrange 6 bread slices, chipotle side up, on work surface. Divide half of cheese among bread slices. Top with tomatoes, onion, cilantro, and remaining cheese. Top with remaining bread, chipotle side down. Spread butter on outside of sandwich tops and bottoms.
3. Cook in skillet until bread is golden and cheese is melted, about 5 mins/side.
Notes: Delicious!! Easy and something different. Used whole wheat bread instead of sourdough. Next time would cut back on the onion - or caramelize it first, which would be more work, but probably really good.
