BREAD - Sweet Butter Bread - Straight Dough

Ingredients

  • (A):
  • 480 gm bread flour(high protein flour)
  • 120 gm plain flour(all purpose flour)
  • 110 gm sugar
  • 10 gm salt
  • 20 gm milk powder
  • 4 tbsp instant yeast
  • 1 tbsp bread improver
  • (B):
  • 1 egg
  • 300 ml cold water
  • (C):
  • 60 gm butter
  • Topping:
  • 1 stick butter (8 tbsp butter)
  • 1/2 cup sugar

Preparation

Step 1

1:Combine (A) ingredients together in a large bowl ,mix well.Add in (B) and knead to form a dough.You can use hand or machine to knead the dough.

2:Add ingredients (C),continue to knead to form a smooth and elastic dough.Cover dough with clear film.Let it prove for 50-60 minutes or till it doubles it's size.

3:Use finer to pressed into the dough.It should show a clear finger tip mark but the dough should not sink.Now it's ready to use making bread or bun.

4:Divide the dough into 2 portion.Roll it up like a Swiss roll .Place the roll up dough into greased or paper lined bread pan.Cover the dough and let it proof in a warm place for 45 minutes or till twice the size.

5:Preheat oven to 365 F.Use a sharp knife or scissor to cut or slit the dough in the middle.Cut cold butter and mix with sugar before top on the dough.Bake for 25-30 minutes or until golden brown.

6:Remove from oven and let it rest in the pan for 5 minutes before un-mould and serve.
