Ingredients
- 2 eggs, at room temperature
- 3/4 to 1 cup sugar
- 1-1/2 cups applesauce, at room temperature
- 1/4 pound (1 stick) unsalted butter, melted and slightly cooled
- 1-1/2 cups all-purpose flour
- 1 tsp. kosher salt
- 1/2 tsp. ground cinnamon
- 1-1/2 tsp. baking soda
- 1 cup chopped toasted walnuts
Preparation
Step 1
Preheat the oven to 350 degrees. Lightly grease a 9x5x3-inch loaf pan.
Place the eggs and sugar in the bowl of a mixer fitted with a paddle and mix until lemon colored and thickened, about 2 to 3 minutes.
Add the applesauce and butter, beating well and scraping down the sides of the bowl each addition. Add the flour, salt, cinnamon, baking soda and nuts and mix to combine.
Scrape down the sides of the bowl and pour into the prepared pan. Transfer to the oven and bake until golden brown and firm in the center, about 1 hour.
