Ingredients
- 1 T butter
- 1 1/2 C frozen corn, or 2 ears fresh
- 1 small onion
- 1 C flour
- 1 t baking powder
- 1 t salt
- 1/2 t pepper
- 1/2 t red pepper flakes
- 2/3 C milk
- 2 eggs
- 1 lb. lump crabmeat
Preparation
Step 1
1. Saute onion in butter until slightly tender. Add corn and cook until both are soft, about 8 minutes. Cool.
2. Combine flour, baking powder, salt, pepper, red pepper. In separate bowl, whisk milk and eggs together. Gradually whisk milk mixture into flour mixture til smooth. Stir in corn and crabmeat. Cover and refrigerate 10 mins.
3. Deep fry small scoopfuls for 1 minute per side. Drain and eat hot.
