Ingredients

  • One rack of lamb (I usually purchase from Costco or Sam’s Club.)
  • Plain bread crumbs
  • Montreal Seasonings mix
  • Dijon mustard

Step 1

Cut excess fat from rack and dry with paper toweling. Rub entire rack with Dijon mustard. Mix together seasoning and bread crumbs (I usually use a 2 quart Pyrex dish). Dip rack in bread crumb mixture and coat both sides well. Place in a foil-lined pan (I use the bottom of a broiler pan. Drizzle with olive oil.

Bake in a pre-heated 450 degree oven for 15 minutes. Reduce heat to 350 degrees and cook for an additional 12 minutes. Remove from oven and let sit a few minutes. Slice into lamb chops and serve immediately. The lamb comes out medium to medium rare. If you like it more rare, decrease the amount of time at 350 degrees.

This is delicious and easy-- looks like you spent all day making it. I usually time it to finish while we are having our salad course. Enjoy!
