Ingredients
- 1 1/4 cups whole wheat flour
- 1 cup oats
- 1/4 cup wheat germ
- 2 tablespoons sunflower seeds or finely chopped walnuts, I omitted
- 4 teaspoons baking powder
- 1 tablespoon sugar
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/8 teaspoon cinnamon
- 1/8 teaspoon cloves
- 1/8 teaspoon nutmeg
- 1 cup milk
- 1/2 cup buttermilk
- 2 eggs
- 1 tablespoon oil
- 1/2 banana, mashed
- 1 apple, finely chopped
- 2 tablespoons raisins
- 1 teaspoon lemon zest, optional
- 1 teaspoon vanilla
Preparation
Step 1
1. Combine flour-nutmeg.
2. Colmbine milk-oil; stir in banana-vanilla. Combine with dry ingredients, mixing just to blend. Batter will be thick.
3. Cook on lightly greased griddle, using about 3 tbsp per pancake.
Notes: These were really very good. Nice and hearty with banana, apple, raisins, wheat germ. Left out the nuts because of Macy. Served with bacon and fresh fruit.
