  • 1 large tomato, chopped
  • 2 tablespoons minced onion
  • 1/2 chile, seeded and minced
  • 1 teaspoon cilantro
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice, 1-1 1/2
  • salt and pepper

Notes: Very good, just an easy dish and nothing phenomenal. Served with Confetti Quesadillas - which was great.
