Soups: Navy bean soup

Ingredients

  • 2 cups uncooked white beans
  • 8 cups water
  • 1/2 t salt
  • 1/8 t pepper
  • 1 bay leaf
  • 2 cups chopped celery
  • 1 cup chopped carrots
  • 1 cup chopped onion
  • 1 can unsalted tomato sauce
  • 1/4 cup chopped parsley
  • Dash of ground cloves

Preparation

Step 1

Soak beans at least 3 hours in cold water.
Drain.
Add 8 cups water, salt, pepper and bay leaf.
Bring to a boil, then simmer for 2 hours or til beans are tender.
Add celery, carrots, onion, tomato sauce parsley and cloves.
Mash some of the beans to thicken the soup.
Simmer 2 hours.
