Tortellini, Olive & Cheese Kabobs

Ingredients

  • 1/3 cup oil&vinegar dressing (2/3 cup)
  • 1 1/2 T. basil pesto (3 T.)
  • 1 cup frozen cheese tortellini (2 cups)
  • 4 oz. cheddar cheese and/or
  • Monterey Jack cheese w/jalapenos, cut into cubes (8 oz.)
  • 16 assorted pitted olives (30)
  • 16 red or green pickled jalapeno peppers (30)

Preparation

Step 1

For marinade, in a medium bowl combine salad dressing and pesto. Set aside.
Meanwhile, cook the tortellini according to package directions; drain. Rinse with cold water; drain again.
On fifteen (or eight) 6" picks or skewers, alternately thread the cooked tortellini, cheese cubes, olives, and pickled peppers. Place kabobs in a 13x9x2" baking dish. Brush with marinade. Cover and chill for 3 to 4 hours.
