Ingredients

    T olive oil

  • 1

    large white onion, sliced

  • salt

  • fresh ground black pepper

  • flour for dusting

  • 1 1/4

    lb round Thin Sin Pizza Dough (see recipe on Key Ingredient)

  • cornmeal for dusting

  • 2

    c cremini mushrooms, thinly sliced

  • 2

    T shredded Gruyere cheese

  • 2

    T chopped fresh flat leaf parsley

  • 2

    T chopped green onion

  • 1

    t chopped fresh thyme

  • 1

    t chopped fresh rosemary

  • 1

    t black truffle oil (available at specialty food stores)

Directions

Preheat oven to 500. Place pizza stone or baking sheet in oven 1 hr prior to cooking pizza. Heat a large pan over med-low. Add olive oil and onion and cook 30 mins, stirring every 3-4 mins until caramelized. Season to taste with salt and pepper; set aside. Lightly flour a work surface and use a rolling pin to roll out the dough as thinly as possible. Transfer the dough to a pizza paddle or oven safe board (like a wooden cutting board) that has been covered with a light dusting of cornmeal. Spread caramelized onion and sliced mushrooms evenly over stretched dough and top with cheese, parsley and green onion. Transfer pizza from board to warmed stone in oven and bake 8-10 mins or until cheese is melted. Remove from oven and garnish with thyme, rosemary and black truffle oil. Let cool 5 mins, cut and serve.
