Ingredients
- 1 round focaccia bread (10 to 12 inches in diameter)
- 2 cups shredded mozzarella cheese (8 ounces)
- 2 cups deli marinated Italian vegetable salad, drained and coarsely chopped
Preparation
Step 1
1 Sprinkle bottom half of focaccia with 1 cup of the cheese. Spread vegetables over cheese. Sprinkle with remaining cheese.
2 Top with top of bread. Cut into wedges.
TIPS:
Focaccia, an Italian bread shaped into a large, flat round, is often drizzled with olive oil and topped with Parmesan cheese before baking.
Look for focaccia in the bakery, deli or frozen-food section of the grocery store.
Using already-shredded mozzarella cheese is certainly easy. For slightly different Italian flavor, shred provolone cheese, which has a slightly smoky flavor, or Fontina cheese, which has a subtle nutty flavor.
