Meringue Shells with Strawberries

Ingredients

  • 1/8 tsp salt
  • 2 egg whites
  • 1/2 cup sugar
  • 1 pint strawberries, sliced and sweetened
  • 1/2 tsp cream of tartar
  • 1/2 cup heavy cream

Preparation

Step 1

Sprinkle salt and cream of tartar over egg whites. Beat until mixture holds soft peaks. Add sugar slowly, beating constantly. Continue beating until mixture holds stiff peaks. Divide into 4 portions and place them about 2 inches apart on ungreased cookie sheet lined with unglazed paper. With a teaspoon, shape each portion into a round "nest" about 3 and 1/2 inches in diameter. Bake in a 225 F oven for about 55 minutes, or until crisp and golden. Turn off heat. Cool in oven with door open.

Whip the cream and sweeten to taste. Fill the meringue shells with berries and top with the sweetened whipped cream.

Garnish tops with half a berry and a mint leaf, if desired.
