Blue Corn Bread
Corn grows so well here and this native corn is a part of our heritage. This bread is also good the next day, warm or cold.

Ingredients
- 1 cup blue corn meal, finely ground
- 1 cup flour
- 1/4 sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/3 cup oil
- 1 egg
- 1 cup milk

Preparation
Step 1
Combine dry ingredients in a large bowl and mix together well. In another bowl, mix together oil, egg and milk.
Stir into dry ingredients until just blended. Pour batter into a well buttered 8-inch square baking pan, and bake at 400 for 25 minutes. Serve warm.
