Corn grows so well here and this native corn is a part of our heritage. This bread is also good the next day, warm or cold.

Ingredients

  • 1

    cup blue corn meal, finely ground

  • 1

    cup flour

  • ¼

    sugar

  • 1

    tablespoon baking powder

  • 1

    teaspoon salt

  • cup oil

  • 1

    egg

  • 1

    cup milk

Directions

Combine dry ingredients in a large bowl and mix together well. In another bowl, mix together oil, egg and milk. Stir into dry ingredients until just blended. Pour batter into a well buttered 8-inch square baking pan, and bake at 400 for 25 minutes. Serve warm. With: Honey Butter or Rosemary Butter
