Red Curry Cauliflower

This recipe uses the basic Indian Red Sauce which forms the base of the sweet curry.

Ingredients

  • Basic Red Sauce:
  • 4 cups peeled tomatoes
  • Cloves
  • Cinnamon
  • Cumin
  • Coriander seeds
  • Cardamom, ground
  • Fenugreek leaf
  • Garam masala
  • Sugar
  • Salt - pinch
  • Curry:
  • 1 head cauliflower
  • Ground cashew nuts
  • 1 tbsp. margarine
  • 2 cups heavy cream
  • Additional Spices:
  • Cinnamon
  • Garam masala
  • Cloves
  • Cardamom
  • Fenugreek leaves
  • Sugar
  • Cumin
  • Coriander

Preparation

Step 1

Basic Red Sauce:

Cook tomatoes until liquefied. Add spices and bring to a boil.

Cauliflower Curry:

Break the cauliflower into florets and fry in canola oil.

Put prepared red sauce into saucepan and add cashew
nuts, margarine and cream. Taste, and add whichever spices seem to be required. You want a sweet curry flavoured sauce.

Simmer gently, pour over cauliflower and serve.
