Ingredients

  • 1 c. shortening
  • 2 1/2 c. sugar
  • 3 eggs
  • 1 1/2 c. mashed bananas
  • 1 1/4 c. buttermilk
  • 1 tsp. vanilla extract
  • 3 c. all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1/2 c. chopped walnuts

Preparation

Step 1

1. Preheat oven to 350 degrees F. Grease two 9 x 5 inch loaf pans.

2. Cream together the shortening and sugar. Add the eggs one at a time, beating well after each addition. Mix in the bananas, buttermilk, and vanilla. Mix in the flour, baking powder, and baking soda. Stir in the nuts, if desired . Pour the batter into the prepared pans.

3. Bake for 50 - 60 min, or until a toothpick inserted into the center of the loaf comes out clean. Let cool in pans for a few minutes before turning out onto a rack to cool completely.
