Ingredients

  • 2 cups of cooked rice
  • Vegetable cooking spray
  • 1 teaspoon olive oil
  • 1 pound skinned, boned chicken breast halves, cut into 1 inch pieces
  • 1 cup frozen chopped green pepper
  • 1 (14oz) jar chunky tomato, garlic and onion pasta sauce
  • 1/2 cup water
  • 1/4 teaspoon salt

Preparation

Step 1

1) Cook rice as directed on package

2) While rice cooks, coat a large nonstick skillet with cooking spray, add oil and place over medium high heat until hot. Add chicken and green pepper, cook stirring constantly, 5 minutes or until chicken is lightly browned.

3) Add pasta sauce, water and salt to chicken mixture, bring to a boil. Cover, reduce heat and simmer for 5 minutes. Stir well.

4) Drain rice, put rice on plate and add chicken and mixture on top
