MOUSSE - CHOCOLATE

Ingredients

  • 8 egg yolks
  • 2/3 C. sugar
  • 8 T. unsalted butter, softened
  • 12 oz. bittersweet chocolate, chopped
  • 2 tsp. vanilla
  • 1 C. chilled heavy cream
  • Fresh raspberries
  • Mint leaves
  • Chocolate shavings

Preparation

Step 1

1. Whisk egg yolks, sugar, butter and 1/2 C. water in double boiler over simmering (not boiling) water; whisk constantly until instant read thermometer reads 160°F and mixture has thickened. Add chocolate and stire until melted and mixture is smooth. Stir in vanilla. Remove from heat; cool.

2. With electric mixer, beat cream until it forms soft peaks; fold into chocolate mixture.

3. Spoon into twelve 6 oz. serving dishes; chill until set, about 4 hours.

4. Garnish with raspberries, mint, chocolate.
