Ingredients

  • 1 or 2 very ripe bananas
  • 1 pkg. yellow cake mix
  • 1 pkg. banana cream pudding (4 serv. size)
  • 4 eggs
  • 1 cup water
  • 1/4 cup oil (canola or vegetable)
  • 1/2 cup chopped walnuts or pecans (optional)

Step 1

Slice bananas into large mixer bowl, beat until well mashed. Add remaining ingredients. Blend until moistened, then beat at medium speed of electric mixer for 2 minutes. Pour into a greased and floured (or use cooking spray with flour) 10" tube pan or bundt pan. Bake at 350 degrees for 60-70 minutes. Cool in pan at least 15 minutes. Remove from pan, finish cooling on rack. Sprinkle with confectioner's sugar if desired.

Note: Cake can be baked in a 13"x9" pan for 50-55 minutes.
