Strawberry Cheesecake Muffins

Ingredients

  • 4 oz neufchatel cheese, softened
  • 1/4 cup powdered sugar
  • 2 1/2 cups all-purpose flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup egg substitute
  • 1 1/4 cups skim milk
  • 1/2 cup brown sugar
  • 1/3 cup melted butter
  • 1 tsp lemon zest
  • 1/4 tsp almond extract
  • 1/4 cup strawberry jam

Preparation

Step 1

1. Preheat oven to 375 degrees F. Grease a 12-cup muffin tin.

2. In a bowl, combine cream cheese and powdered sugar; beat until smooth. Set aside.

3. In a bowl, combine flour, baking powder, and salt. In another bowl, combine egg, milk, brown sugar, butter, zest, and extract. Add to flour mixture; stir just until moist and blended.

4. Spoon batter into prepared muffin tin, filling half full. Add 1 Tbsp cream cheese mixture and 1 tsp jam. Top with remaining batter. Bake in preheated oven about 20 minutes or until lightly browned.

Notes: These muffins are so good! They have a cream cheese/strawberry jam filling, which really does make them taste like strawberry cheesecake. The Yum! My changes: egg substitute, 1/3-less-fat cream cheese, and skim milk. I also added a bit of vanilla extract to the cream cheese mixture, and used vanilla instead of the almond extract and lemon zest and yogurt for half of the butter.
