Stovetop Sausage and Mushroom Casserole

Ingredients

  • 1/2 lb sweet Italian turkey sausage link
  • 2 cups shiitake mushrooms, sliced
  • 1 onion, coarsely chopped
  • 1 cup white rice
  • 2 cups chicken broth, reduced-sodium
  • 2 Tbsp grated Parmesan cheese
  • 1/2 tsp pepper

Preparation

Step 1

1. Slice open and remove the casings from the sausage. Spray a large nonstick saucepan with nonstick spray; heat over medium-high heat. Add sausage, mushrooms, and onion, breaking up the sausage with a fork. Cook until sausage is browned and mushrooms and onion are tender, about 8 minutes.

2. Add rice, stirring to coat, and broth; bring to a boil. Cover, reduce heat, and simmer until broth has evaporated and rice is tender, about 20 minutes. Stir in Parmesan cheese and pepper.

Notes: This is the epitomy of comfort food! Really easy, but very satisfying - one of those recipes that's more than the sum of its parts. Served it with roasted acorn squash, which was perfect with it.
