Macaroni Salad "Hawaiian Style"

Ingredients

  • 2 c whole milk
  • 2 c mayonaise
  • 1 T brown sugar
  • salt & pepper
  • 1 # elbow macaroni
  • 1/2 c cider vinegar
  • 1 carrot(grated)
  • 1 celery rib(chopped fine)

Preparation

Step 1

1-Whisk 1 1/2 cups milk, 1 cup mayo, sugar, 1/2 tsp salt and 2 tsp pepper.
2-Bring 4 quarts water to boil. Add 1 T
salt and pasta, cook until very soft,(15 min). Drain pasta and return to pot.
3-Add vinegar and toss until absorbed, cool 10 minutes.
4-Stir in dressing until pasta is well coated. Cool completely.
5-Add carrot, celery, 1/2 cup milk and 1 cup mayo to pasta mixture and stir to combine.
6-Season with S&P, transfer to serving bowl and refrigerate, covered, for at least 1 hour or up to 2 days.
