Ingredients
- 1/2 C butter
- 1 1/2 C sugar
- 1 egg
- 1 t vanilla
- 1 C milk
- 1 t lemon juice
- 2 C flour
- 1 t soda
- 2 C fruit diced (strawberries, blueberries, rhubarb, pineapple (fresh or drained canned, etc.)
- Crumb Topping
- 1/4 C butter
- 1 C flour
- 1/2 C sugar
- 1/2 t cinnamon
Preparation
Step 1
Preheat oven to 350 degrees. Line 24 muffin cups with muffin papers.
Cream together butter and sugar. Add egg and vanilla and blend until smooth.
Mix together milk and lemon juice and set aside. Mix together dry ingredients in a separate bowl and set aside. Add milk mixture and dry ingredients little by little to butter mixture. Blend together. Fold in fruit and scoop muffin batter into muffin pan.
With a fork, blend together Crumb Topping ingredients until mixture is crumbly. Sprinkle over top of muffin batter.
Bake for 25 minutes or until muffin springs back when patted with finger.
