Use the Pie-maker. cook the filling ahead of time and add to egg last minute

Ingredients

  • 2 tspns butter
  • 1/2 cup chopped red onion
  • 1 cup chopped mushrooms
  • 1/4 cup finely chopped basil
  • tablespoon dried parsley
  • s & P
  • 1/2 tspn red pepper flakes
  • 4 eggs lightly beaten
  • 2 or 3 small zucchini chopped small
  • ready made pie crust or can use puff pastry but edges not as pretty

Preparation

Step 1

saute mushrooms in butter, set aside
saute onions and zucchini until soft, set aside
combine beaten eggs , herbs, s and p, chili pepper, and veggies.
preheat pie maker
precute 8 bases of pie crust only, place 4 of them in the pie maker
spoon egg mixture into each one to top. close lid, bake about 8 mins. check until set and browned on top.
remove, cook the other four.
