Cinnamon Swirl Cake

Ingredients

  • 1 cup margarine or butter
  • 1 cup sugar
  • 3 eggs
  • 1 tsp. vanilla
  • 3 cups sifted flour
  • 3 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp salt
  • 1 cup sour cream
  • 1/2 cup sugar
  • 2 tsp cinnamon

In a bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla. Add sifted flour, baking powder, baking soda and salt alternately with sour cream

Pour half the batter into a well greased and floured tube pan ( 10 inch). Combine remaining half cup of sugar with the cinnamon. Sprinkle half of this mixture over the batter in the pan.
Gently run a spatula through to marbelize cinnamon - sugar mixturethroughout the batter. Pour remaining into the pan. Sprinkle remaining sugar - cinnamon mixture over top of batter.

Bake in a moderate oven until cake tester inserted in center of cake comes away clean. Remove to rack. Cool, and then remove from pan. Serve warm or cold.

When adding flour alternately with liquids, always add flour in fourths and liquids in thirds, beginning and ending with flour.

Aluminum utensils should be baked 25 degrees more than glass
