Impossible Coconut Pie (Food and Wine)

Ingredients

  • ! stick butter,melted plus more for greasing
  • 13/4 cup sugar
  • 4 large eggs
  • 1/2 cup self rising flour
  • 2 cups sweetened shredded coconut
  • 2 cups cream
  • 11/2 tsp vanilla
  • pinch salt

Preparation

Step 1

Preheat oven to 350 and butter 2 -9 inche pie pans.
In a large bowl,whisk the melted butter with the sugar,add the eggs and beat until smooth. Stir in the flour,coconut and cream and vanilla and salt. Divide the mixture between the pie plates and bake in the lower third of the oven until golden and firm to touch.
Transfer to a rack and cool completely.
The pies can be made ahead and refrigerated bring to room temp for serving.
