Strawberry Cobbler

Ingredients

  • 1 cup flour
  • 1 tablespoon sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold butter, in 1/2" pieces
  • 1 cup nonfat buttermilk
  • 5 cups strawberries, 4-5 cups; hulled and halved
  • 1/3 cup cornstarch
  • 1/2 cup sugar
  • 1/2 lemon, zest of

Preparation

Step 1

1. Heat oven to 400.

2. Combine flour-salt. Cut in butter. Fold in buttermilk just to combine.

3. Toss berries-zest. Pour into 9x9" square pan. Pour batter on top and spread gently to edges.

4. Bake 45-50 mins, until golden. Serve warm.

Notes: Excellent!

Used fresh blueberries and raspberries in addition to strawberries. Also substituted Splenda for sugar (all of it!) Stellar.
