Ingredients

  • 4 boneless skinless chicken breasts
  • 1/4 c flour
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tsp olive oil
  • 1 tsp butter
  • 2 cloves garlic, minced
  • 1 can chicken broth (14.5 oz)
  • 1 Tbs lemon juice
  • 2 Tbs fresh parsley minced
  • 2 Tbs drained capers

Preparation

Step 1

Mix flour, salt, pepper inpir plate. reserve 1 tbs
Flatten chicken to 1/2 inch.
Dredge in flour.
heat oil and butter in large skillet over medium het. Add chicken, cook 4-5 minutes per side. Transfer chicken to serving platter with foil over.
Add garlic to pan, stir one minute. Add reserved flour mix. Stir and cook one minute. Add broth and lemon juice.
Stir till slightly thickened, 2 minutes.
Add capers and parsley. Pour over chicken.

Serve with buttered pasta.
