Ingredients
- 1 C. sugar
- 1/4 C. water
- 1/2 C. light corn syrup
- 1 C. salted peanuts
- 1 1/2 tsp. vanilla extract
- 1 T. soft butter
- 1 1/2 tsp. baking soda

Step 1
1. Place large sheet of parchment paper on cookie sheet (or put some aluminum foil on a cookie sheet and butter it.) Set it by the stove, waiting to receive the brittle once it is ready to pour.
2. Put sugar, water and syrup into saucepan, bring to gentle boil, then turn up heat and let boil 8 to 10 minutes, swirling (but not stirring) pan a couple of times, until syrup has turned gold in color. It will be smoking by then so be warned!
3. Take saucepan off heat and with wooden spoon stir in salted peanuts, followed by vanilla extract, butter and baking soda. You will have a golden, frothy hot and gooey mixture.
4. Pour briskly on to waiting parchment paper or foil, using wooden spoon to coax and pull it to make nut-studded sheet rather than a heap.
5. Leave to cool, then break into pieces and store in airtight container or box or bag up at once to give as presents. You'll get about 1 pound in total, and it's up to you how much you want to put in each bag. It is easier to do several small batches rather than multiplying quantities as you cook.
6. Make ahead tip: Make brittle up to 1 week before eating or giving. Store in air-tight bags or containers in dry, non-humid environment. Once opened, eat within 7 to 10 days.
