Simply Sinful Cinnamon Muffins

These muffins feature a luscious center of moist, rich cinnamon filling.

Ingredients

  • TOPPING:
  • 1/3 cup brown sugar, packed
  • 1/4 cup diced pecans
  • 1/4 cup rolled oats
  • 1/2 cup King Arthur Unbleached All-Purpose Flour
  • 3 tablespoons soft butter

  • 1/2 cup Baker's Cinnamon Filling mix
  • 3-4 tablespoons water

  • BATTER:
  • 1/2 cup (1 stick) butter, melted
  • 3/4 cup milk
  • 2 large eggs
  • 1 3/4 cups King Arthur Unbleached All-Purpose Flour
  • 1/2 cup rolled oats
  • 2 tablespoons cornstarch
  • 3/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup cinnamon chips

Preparation

Step 1

Preheat your oven to 400°F. Line a 12-cup muffin pan with cupcake papers, or grease it lightly. Prepare the topping by mixing the ingredients together until crumbly. Set aside.

Prepare the filling by mixing the Baker's Cinnamon Filling with enough water to make filling with a soft, pudding-like consistency. Set it aside.

To make the batter: In a large bowl, whisk together the melted butter, milk, and eggs. In a separate bowl, whisk together the dry ingredients. Add the dry mixture to the liquid, stirring just until combined.

Divide half the batter evenly among the muffin cups. Dollop 2 teaspoons cinnamon filling onto each muffin, then top with the remaining batter. Sprinkle with topping, pressing it in lightly.

Bake the muffins for 20 to 25 minutes, or until they're golden brown. Remove them from the oven, and wait 5 minutes before transferring them from the pan to a rack to cool. Yield: 12 muffins.

I made these muffins twice without the icing. The first time, I followed directions (except for omitting the cinnamon chips) and my 1 1/2 year old daughter loved them!! It was all she wanted to eat!! I took 5 muffins in to work and my co-workers were fighting over the last one. I just made them again today with the cinnamon chips but without the pecans (We aren't really crazy for them) and my daughter still loved it. I will say that this batch tastes better because the cinnamon chips gave it that extra pop and takes the cinnamon flavor to another level!! It didn't seem like overkill to me but we love cinnamon in my house. I highly recommend this muffin!! Oh, I forgot to mention that I didn't make the icing/glaze for these, either. It looked like there was going to be too much streusel topping but I just packed it all on and omitted the icing. Never missed it. :o)

Just took these out of the oven. I made six texas-sized muffins and husband and I split one while they were still warm. If I were told I could only bake and eat one kind of muffin for the rest of my life, this would be the one! It is totally awesome!! I didn't have any of the cinnamon chips on hand, and I'm really glad because I think it might have been overkill. The husband agrees. I didn't have the filling mix or the thickener so I followed the alternate directions with the addition of sultanas which I allowed to soak in the milk and egg mixture while I put together the dry ingredients. I did add a 1/4 t. of cloves with the nutmeg and used organic dark brown sugar in the filling which really made it so very dark and decadent. This is a keeper and I envision making them again and again!

I really enjoyed these muffins, the reviews at home were thumbs up from all "they taste like a snickerdoodle muffin." The strussel on top adds just enough crunch definitely adding this one to my recipe box Thank You King Aruthur another great recipe

Absolutely fabulous......a bit more work than making an unfilled muffin...but so worth it!

Muffin had a nice moist crumb, Not dense/heavy like many muffins can be. Made them with Butterscotch chips. only wish I had the cinnamon chips on hand. May try it with cappuccino chips next round for a hint of coffee flavor.

Margaret from Indiana here again. Not wanting to admit defeat I retried the recipe without the filling. I upped the cinnamon chips to 3/4 cup and the muffins turned out beautifully. I'm still not sure why I had such a problem with the earlier ones sticking.

I was so disappointed in these. The filling basically sank to the bottom of the muffin and stuck to the muffin paper (I even sprayed the papers with PAM) The whole muffin then fell apart when removed from the paper. The flavor of the pieces was good though.

Yum! I made these this morning with my 3 1/2 yo. son. Very easy, fun to put together and delicious!

I've been making these muffins for almost a year now and they are simply great. Much better than a typical struesel coffee cake. They are a little extra work making the filling and topping but well worth the effort!
