Whisk 3 tablespoons maple syrup, 2 tablespoons lemon juice, 1 teaspoon Dijon mustard, and a minced garlic clove in a small saucepan. Season 1 pound skirt steak with 1/2 teaspoon salt and 1/4 teaspoon black pepper and set aside. Heat a lightly oiled grill pan or heavy frying pan over medium-high heat. Cook steak to desired doneness, about 3 minutes per side for medium-rare. Transfer to a cutting board and let rest 5 minutes. Meanwhile, bring maple-lemon mixture to a boil over medium-high heat. Let simmer 1 minute. Cut steak into thin slices across the grain and drizzle with sauce.
