Ingredients
- 1/4 cup butter, softened
- 1/4 cup sugar
- 1 teaspoon lime zest
- 1/8 teaspoon salt
- 1/8 teaspoon lemon extract
- 1 cup flour
- 2/3 cup sugar
- 3 tablespoons flour
- 3/4 teaspoon baking powder
- 1/8 teaspoon salt
- 1/2 cup key lime juice
- 3 large eggs
- 1 tablespoon powdered sugar
Preparation
Step 1
1. Heat oven to 350.
2. Beat together butter, sugar, zest, salt and lemon extract until creamy, about 2 mins. Gradually beat in flour until mixture resembles coarse meal. Gently press 2/3 of dough into bottom of a sprayed 8" square baking pan. Bake 12 minutes, or until just beginning to brown.
3. Combine sugar-salt. Add lime juice and eggs, whisking until smooth. Pour over crust. Bake 12 minutes. Remove pan from oven and sprinkle with rest of dough mixture. Bake another 8-12 minutes, or until set. Cool in pan on wire rack, sprinkle with sugar.
Notes: these were good and worth repeating. Very easy to make. Used regular (bottled) lime juice. Key lime juice may be better.
