Oriental Pork Salad

Ingredients

  • Marinade:
  • 1 lb. pork tenderloin
  • 2 Tbsp. brown sugar
  • 1 1/2 Tbsp soya sauce
  • 2 Tbsp. sherry
  • 1 Tbsp. Hoisin
  • Dressing:
  • 1 Tbsp. olive oil
  • 1 Tbsp. peanut oil
  • 2 Tbsp. sugar
  • 2 Tbsp. soya sauce
  • 1 tsp. ginger
  • 1 dash Louisiana Hot Sauce
  • Salad:

  • 6 oz. vermicelli
  • 1 cup carrots, julienned
  • 1 cup snow peas
  • 4 green onions, sliced
  • 1 Tbsp. toasted sesame seeds

Preparation

Step 1

Cut the pork into very thin slices, suitable for stir-frying, and place in plastic bag. Mix marinade ingredients and pour over pork. Seal bag and place in refrigerator to marinate for 1 hour.

Combine dressing ingredients. Blend well and place in refrigerator to chill.

Cook vermicelli. Add snow peas and carrots during last two minutes. Drain and rinse immediately with cold water.

Put into salad bowl and pour dressing over top. Add the green onions.

Stir-fry the pork with the marinade. Drain, add to the salad and toss well.

Cover and refrigerate for 1 hour. Sprinkle with sesame seeds just before serving.
