Ingredients

  • 1 15 oz. pkg. unbaked piecrust (2 crusts)
  • 5 Tbs. sugar
  • 3 Tbs. cornstarch
  • 3/4 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 4 med. red plums or pluots, pitted and cut into 8ths
  • 4 med. apricots, pitted and cut into quarters
  • 1 Tbs. lemon juice
  • 1 Tbs. honey butter softened
  • coarse sugar
  • vanilla ice cream

Preparation

Step 1

preheat oven to 375
let pie crusts stand at room temp. as directed on package
in large mixing bowl combine sugar, cornstarch, cinnamon, and nutmeg
stir in plums, apricots, and lemon juice
set aside
unfold pie crusts
place 1 crust on 12" pizza pan
cut out a 3-4" circle from remaining crust

stir fruit mix
mound in center of whole pie crust
top with remaining crust with hole in center of mound
firmly roll edges of crusts
place double thickness of foil over exposed fruit
bake 25 min. remove foil
bake 20 min. more or until fruit is tender and crust is golden brown
brush hot fruit, and crust with honey butter and sprinkle with sugar
serve warm with ice cream
